Main ingredients:

  • Lotus root (about 1 medium sized root segment), peeled and sliced into 3mm thin slices
  • Pork ribs (around 300-350g, with bone), chopped into 2-3″ pieces
  • 2L water
  • Salt to taste

Optional ingredients but really makes the soup delicious:

  • Pork bone (as broth base)
  • Red dates
  • Dried cuttlefish/squid

Method

  • Boil everything together till meat is tender & lotus roots soften
  • I usually add salt at the end to season the soup
  • Serve hot. Yup, that’s about it. LOL.
