Main ingredients:
- Lotus root (about 1 medium sized root segment), peeled and sliced into 3mm thin slices
- Pork ribs (around 300-350g, with bone), chopped into 2-3″ pieces
- 2L water
- Salt to taste
Optional ingredients but really makes the soup delicious:
- Pork bone (as broth base)
- Red dates
- Dried cuttlefish/squid
Method
- Boil everything together till meat is tender & lotus roots soften
- I usually add salt at the end to season the soup
- Serve hot. Yup, that’s about it. LOL.
